Chocolate Buckwheat Granola

Chocolate Buckwheat Granola

This is one of my favorite recipes lately. ⁣It’s perfectly paired with dairy-free milk,  on top of berries + yogurt (coconut or sheep’s) or on its own. ️

  • ⁣Nut-free⁣

  • Easy to make⁣

  • Grain-free⁣

  • Refined sugar-free

  • High in Fibre

Ingredients:⁣

2 cups of rolled oats⁣

2 cups of buckwheat groats ⁣

1 ½ cups large coconut flakes⁣

1 cup of mixed nuts and seeds (I used pumpkin seeds, walnuts+ hazelnuts)⁣

¼ cup flax⁣

2 tbs of hemp hearts ⁣

1/2 tsp sea salt⁣

¼ cup coconut sugar⁣

1/3 cup of maple syrup⁣ @rainbomushrooms

1/3 cup coconut oil⁣

½ cup cacao powder⁣

Directions:

1. Preheat oven to 350°F ⁣

2. In a large bowl combine oats, buckwheat, coconut flakes and coconut sugar. Chop nuts/seeds and add them in. ⁣

3. In a small saucepan over low-medium heat, melt coconut oil. Add maple syrup, salt and cocoa powder. Whisk to combine until smooth.⁣

2. Pour liquid ingredients over dry mix.⁣

3. Spread mixture out in an even layer on a lined baking sheet and Bake for 15-20 minutes. Remove from oven, flip granola in large chunks, and place back in oven to bake for another 10 minutes, stirring every 3-4 minutes. Allow to cool for 15 mins.
